  6. Chilly powder            : 1 tea spoon

  9. Ginger powder           : 1/2 tea spoon
  10. Coriander powder      : 3 table spoons
  11. Garam/Meat masala  : 2 tea spoons
  12. Salt                            : to taste
  13. Coriander leaves        : for garnishing

Method

  1. Cut beef into small cubes.
  2. Make ingredients 5-12 into a paste with a small amount of water.
  3. Marinate the beef cubes with the above paste for ~3 hours.
  4. Cut onion into small slices.
  5. Heat oil in a pressure cooker (preferably, one w/ a non-stick coating).
  6. Saute onion slices and curry leaves until golden-brown.
  7. Add marinated beef cubes to the above mix. Add 500 ml water and pressure cook for 20 minutes.
  8. If water remains after the beef is completely cooked, continue cooking on a low flame, w/ the cooker open, until the beef is completely fried.
  9. Garnish w/ coriander leaves, if desired.
  10. Tip
I usually use chuck stew cuts for beef fry. I’ve also used sirloin steak cuts in the past for frying. But, I think the chuck cut comes better when fried. The brand, I used 4 the fry in the picture is Sutton & Dodge, from Target.

Serves 5-6 people
